Millie Pham

Bright, creamy, and packed with citrusy goodness, these Lemon Curd Overnight Oats are the perfect way to wake up! The sweet-tart lemon curd blends beautifully with the creamy oats, making every spoonful taste like dessert for breakfast. Plus, they’re super easy to prep the night before!

Let’s get started.

What You’ll Need

For the Overnight Oats:

  • ½ cup rolled oats
  • ½ cup milk (dairy or non-dairy)
  • ¼ cup Greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract

For the Lemon Curd:

  • 1 large egg
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tbsp sugar
  • 1 tbsp butter

For Toppings (Optional but delicious!):

  • Granola
  • Extra lemon zest
  • Drizzle of honey

Pro Tips

  1. Make extra lemon curd! It keeps in the fridge for a week and is great on toast or yogurt.
  2. For thicker oats, use less milk or add more chia seeds.
  3. Prefer it sweeter? Add extra honey or maple syrup.
  4. For a dairy-free version, use coconut yogurt and almond milk.
  5. Chill for at least 4 hours, but overnight is best!

Tools You’ll Need

  • Small saucepan (for lemon curd)
  • Whisk
  • Mixing bowl
  • Mason jar or airtight container

Instructions

Step 1: Make the Lemon Curd

In a small saucepan, whisk together the egg, lemon juice, lemon zest, and sugar over low heat.

Step 2: Thicken the Lemon Curd

Cook the mixture over low heat, stirring constantly, until thickened (about 5 minutes). Remove from heat and stir in butter. Let cool.

Step 3: Mix the Overnight Oats

In a mixing bowl, combine oats, milk, Greek yogurt, chia seeds, honey, and vanilla extract. Stir well.

Step 4: Layer the Oats & Lemon Curd

Spoon half of the oat mixture into a jar, add a layer of lemon curd, then top with the remaining oats.

          Step 5: Chill Overnight

Cover and refrigerate for at least 4 hours or overnight.

          Step 6: Garnish & Serve

Top with granola, extra lemon zest, or a drizzle of honey before serving.

            Leftovers & Storage

            • Store in the fridge for up to 3 days.
            • If oats are too thick in the morning, stir in a splash of milk.

            Wrap-Up

And that’s it—your Lemon Curd Overnight Oats are ready! They’re bright, creamy, and bursting with citrus flavor, making them the perfect refreshing breakfast. Try them out, take a pic, and let me know how they turned out. Enjoy! 🍋🥣✨
