🍑 What You’ll Need

For the Crust & Topping:

  • 1 ½ cups old-fashioned oats
  • 1 ¼ cups all-purpose flour
  • ½ cup light brown sugar
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, melted
  • 1 tsp vanilla extract

For the Plum Filling:

  • 2 cups ripe plums, diced
  • ¼ cup granulated sugar
  • 2 tsp lemon juice
  • 1 tbsp cornstarch
  • ¼ tsp cinnamon (optional)

🧁 How to Make Oatmeal Plum Bars

Step 1: Make the Oatmeal Crust & Topping

In a bowl, mix oats, flour, brown sugar, baking soda, and salt. Add melted butter and vanilla. Mix until crumbly.

Step 2: Press Dough Into Pan

Take two-thirds of the crumb mixture and press it firmly into a parchment-lined 8×8 pan to form the crust.

Step 3: Make the Plum Filling

In a small bowl, stir together diced plums, granulated sugar, lemon juice, cornstarch, and cinnamon until juicy and coated.

Step 4: Add Plum Filling on Top of Crust

Spread the plum filling evenly over the crust.

Step 5: Add Crumb Topping

Sprinkle the remaining oat mixture over the plum layer, leaving some gaps so the fruit peeks through.

Bake at 350°F (175°C) for 30–35 minutes, until golden and bubbling.

Step 7: Cool and Slice

Let bars cool completely in the pan before slicing into squares.
