- Use ripe plums – Softer ones give off the most flavor.
- No bourbon? No problem! This is just as delicious without it.
- Strain well – Nobody wants to sip a clove. Use a fine mesh strainer.

- Garnish matters – A cinnamon stick and plum slice look pretty and smell amazing.

Instructions
Step 1: Add sliced plums and spices to saucepan
Toss the sliced plums, cinnamon stick, star anise, and cloves into a small saucepan.

Step 2: Pour in water and bring to a simmer
Pour 1½ cups of water over the fruit and spices. Bring to a gentle simmer over medium heat.

Step 3: Simmer 10 minutes
Let the mixture simmer gently for about 10 minutes, until plums are softened and the water is deeply colored.

Step 4: Strain and add honey & lemon
Strain the hot plum-spice liquid into a heat-safe bowl or mug. Stir in 1 tbsp honey and juice from ½ lemon.

Step 5: Add bourbon (optional)
Pour in 1½ oz bourbon if using. Stir gently.

Step 6: Garnish and serve
Pour into a mug and garnish with a plum slice or cinnamon stick if you like. Serve warm and enjoy.
