The Blueberry Coffee Cake is one of my go-to desserts for gatherings, brunches, and whenever I need a quick and delicious treat to impress my friends and family.

The combination of fresh blueberries and a tender, moist cake makes it an irresistible option that everyone loves.

In this recipe, I added vanilla extract to boost the flavor. It gives off a sweet aroma that goes really well with the blueberries, making each bite tastier and richer.

Blueberry Coffee Cake Ingredients

Cake:

  • 2 cups Bisquick baking mix
  • 2 eggs
  • 3/4 cup milk (regular or buttermilk)
  • 1/2 cup sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Streusel Topping:

  • 1/2 cup brown sugar
  • 2/3 cup Bisquick baking mix
  • 1/4 cup salted butter (cold, cut into small pieces)
  • 1/2 teaspoon ground cinnamon

Blueberry Coffee Cake Recipe Instructions

1. Preheat your oven

First things first, set your oven to 375°F (190°C) so it can warm up while you prepare the cake. This temperature is just right for baking our blueberry coffee cake to a golden perfection.

Next, take a 9×9-inch square baking pan and either grease it well or line it with parchment paper. This step ensures that your cake won’t stick to the pan, making it easier to remove and serve.

Now, you’re all set to start mixing your ingredients!

2. Prepare the Cake Batter

Start by cracking 2 eggs into a mixing bowl and adding 1/2 cup of sugar. Mix these together until they are well combined.

Next, pour in 3 tablespoons of melted salted butter and 1 teaspoon of vanilla extract, and give it another good mix.

Now, add 3/4 cup of milk (you can use regular milk or buttermilk) and stir until everything is nicely blended.

3. Prepare the Streusel Toppings And Put Them On Top Of The Batter

In a small bowl, mix together:

  • ½ cup of brown sugar
  • ⅔ cup of Bisquick baking mix
  • ¼ cup of cold salted butter pieces
  • ½ teaspoon of ground cinnamon.

Use a fork or a pastry cutter to cut the cold butter into the mixture until it becomes crumbly. This will give you that perfect streusel texture.

Once your streusel is ready, sprinkle it evenly over the top of the cake batter. Make sure not to press it in; it should just sit on top of the batter.

This way, you’ll get a delicious, crumbly topping once it’s baked.

4. Bake the Cake

Place your cake in the preheated oven and bake for about 35 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean.

Once baked, let the cake cool in the pan for at least 10 minutes. This helps it set and makes it easier to cut.
